Yak cheese is a unique western style cheese produced from the milk of a Nak, the female Yak, a hairy bovine endemic to the Himalayas living at altitudes between 10,000 to 17,000 ft. Although close to tomme de Savoie in texture, a semi-firm cow cheese from France, Yak cheese nevertheless has a unique taste of its own. Having lived and worked in New York City for many years, we not only came to savor the wide assortment of fine, delectable cheeses available but also to realize how fond of cheese consuming Americans/New Yorkers are. For us, it was therefore a small step from there to grabbing the idea of importing to New York/America exotic, gourmet yak cheese manufactured in the dizzy altitudes of the Mount Everest region of Nepal, our home country.
